Dinner on a Dime: oats

It’s no secret that Lyon College influencer Michael Jorgensen loves oats. He even has an instagram account dedicated to oatmeal recipes (@oh.my.fricking.oats). Below are a few of Michael’s favorite oats recipes and how to make them!

Overview

Prep Time: 2 minutes

Cook Time: 2.5 minutes

 

Ingredients

 

Peanut Butter and Banana Oatmeal

Total Cost: $1.54 per serving

1/2 cup oats ($0.32 per serving)

1 tbsp chunky peanut butter ($0.07 per serving)

1 tbsp chia seeds ($0.15 per serving) 

1 cup almond milk ($0.25 per serving)

1 banana  ($0.75 per serving)

Cinnamon to taste 

 

Strawberry and Flax Oatmeal

Total Cost: $1.54 per serving

1/2 cup oats ($0.32 per serving)

1 cup strawberries ($0.65 per serving) 

1 tbsp chia seeds ($0.15 per serving) 

1 tbsp peanut butter  ($0.07 per serving)

1 tbsp flax seeds ($0.10 per serving) 

1 cup almond milk ($0.25 per serving) 

Cinnamon to taste 

 

Apple, Brown Sugar, and Cinnamon Oatmeal

Total Cost: $1.39 per serving

1/2 cup quick oats ($0.32 per serving)

1 Fuji apple ($0.60 per serving) 

1 tbsp chia seeds ($0.15 per serving) 

1 tbsp crunchy peanut butter ($0.07 per serving)

1 cup almond milk ($0.25 per serving) 

Brown sugar and cinnamon to taste 

 

How to Make It

Place 1/2 cup oats into microwave safe bowl.

Put 1 cup of water or milk of your choosing into the bowl.

Add 1 tbsp of chia seeds and mix well.

Microwave for 2.5 minutes. At around 2 minutes check to see if the milk has begun to evaporate or mix evenly with your oats. 

Once fully cooked or 2.5 minutes have elapsed, pull oats out of the microwave.

Add toppings (peanut butter, banana slices, etc.). You can stir them into your oatmeal or keep them on top while you dive in!
