Single Serving Shrimp Fried Rice

This easy fried rice recipe only takes about ten minutes to prepare, which makes it a perfect meal for the college student on the go. You only need to use one pan for everything, so cleanup time is short, as well. Don’t let the weeknight rush limit your diet—crunch time can be delicious, too!

Yields one serving (about two cups)


1 (8.5-oz.) pkg. pre-cooked microwavable white or brown basmati rice ($0.77 per serving)

2 teaspoons canola oil

8 large peeled, deveined raw shrimp, cut in thirds (about 3 oz.) ($1.32 per serving)

1/2 tablespoon unsalted butter ($0.11 per serving)

1 large egg, scrambled ($0.13 per serving)

1/2 cup frozen peas and carrots ($2 per serving)

2 teaspoons soy sauce ($0.18 per serving)

1/8 teaspoon black pepper

Sriracha to taste (roughly $0.10 per serving)

How to Make It:

Prepare rice according to package directions, and let cool on a plate for 5 minutes.

Heat oil in a large nonstick skillet over high.

Add shrimp, and cook, stirring constantly, until pink, about 30 seconds.

Add rice, and cook 3 minutes, stirring every minute.

Push rice mixture to sides of skillet to form a well in the center. Melt butter in center of skillet.

Add egg to hot butter, and cook, stirring constantly, until mostly set.

Add peas and carrots, soy sauce, and pepper; cook, stirring often, until heated through, 1 to 2 minutes.

Remove from heat. Drizzle with Sriracha to taste.
